Hey folks,

Welcome to this edition of Savory Sundays! I hope everyone had a nice weekend! Last week I went to the Farmer's Market and picked up a bunch of Kale. I took the shortcut and bought it already pre-packaged to save myself some time in preparation. I happen to love Kale. If you have never tried it, it is very reminiscent of collard greens. In fact many people combine collard greens, kale and mustard greens together. I decided to keep it nice and simple and had just the kale.

All I did was get a nice big pot with a lid and put a small amount of oil in the bottom. I took the washed kale and put it in the pot in about two small batches. You can determine how many batches you need to do based on how much kale and how big your pot. In my case, I only had one medium sized bag. I put the lid back on the pot and let the kale simply steam. Once the kale was cooked, I just added some sea salt, pepper, a little season all and about a teaspoon of Earth Balance (vegan "butter" if you will) for seasoning. I paired the kale with some roasted red potatoes and that was it! A very nice, easy and quick savory meal for any day of the week!

Some Info on Kale:

When picking: Choose dark colored bunches with small to medium leaves.

To Store: In the coldest part of your fridge in a plastic bag for 3-5 days.

For your body: Great source of vitamin A and vitamin C, as well as calcium and potassium. (See you can get calcium in your veggies, no need for dairy!)

So, when you want a different type of green..savor it up with some kale!

  1. Idk, Christa. This sounds a bit like a preparation of seaweed. Is that what kale is...a variation of seaweed? Why does that name sound like something from the ocean? Are you trying to trick me into eating seaweed?

  2. LOL! It's not seaweed Ash and not it isn't a variation of it. You are too funny!
