SAVORY SUNDAYS- RAW ZUCCHINI HUMMUS

Hey everyone!

Welcome to Savory Sunday! Today's savory treat comes from a recipe I found in my Vegnews magazine by Gena Hamshaw. This sounds like such a great alternative to your traditional hummus.

RAW ZUCCHINI HUMMUS


INGREDIENTS:


2 zucchini, finely chopped with ends removed
1/3 cup fresh lemon juice
1 teaspoon of salt
1 1/2 teaspoons ground cumin
1 cup raw tahini
1/4 cup olive oil
Paprika for garnish

DIRECTIONS:

In a food processer (I'm assuming you could also use a blender), combine the zucchini, lemon juice, salt, cumin and tahini and blend, stopping periodically to scrape down the sides. Drizzle in olive oil as needed and garnish with paprika.

This recipe sounds so delicious and ever so simple. I have some zucchini in the fridge that I haven't used yet, so this will be it! I'll let you know how it goes!
