Welcome to Savory Sunday! About a week ago, I ran into the store to grab some lunch because I didn't have time to prepare anything for myself the night before. When I know I'll be out working during the day, I like to have a lunch that will not require heating up since I don't use microwaves.

So, I settled on a colorful and beautiful looking vegetable salad. It had red onion, zucchini, yellow squash, eggplant and red peppers. It was tossed in light olive oil and garlic with a little salt and pepper. It was simple and delicious and could be eaten cold/room temperature. I'm assuming all they did was saute the vegetables in olive oil and garlic until soft and seasoned with salt and pepper to taste. It can't get any easier than that!

My taste buds were happy and satisfied at my lunch hour. I brought my insulated lunch carrier to keep whatever I would get from the store in until it was time to eat. This recipe is definitely a keeper and one I will probably be preparing for a day or two for lunch this week!
