Hey everyone!

Welcome to Savory Sunday! I know many people will be firing up the grill today to celebrate the 4th! So, I of course decided to post a recipe sans meat products for you to try! I was always a fan of potato salad growing up and this side dish seems to make it to many bbq's. So, below is a potato salad recipe from vegweb vegan style!

Ingredients (use vegan versions)

10 small petite red potatoes
1/2 - 1 cup yellow onion
1/2 - 1 cup green pepper
1/2 - 1 cup vegan mayonnaise- (you should be able to find this at whole foods, trader joe's or any other natural foods store. Perhaps even in the natural foods section of your supermarket, the one I see most often is called Veganaise).
1/4 - 1/2 cup of your favorite mustard
1 cup sweet pickle relish with juice
salt to taste
black pepper to taste

Cut and boil potatoes. I quarter them and cook until soft but not mushy. I also leave the peels on.

Chop onion and green pepper. Add these and the remaining ingredients.

Chill and serve.

Serves: at least 8

Preparation time: 30-40 minute

Now, obviously the above recipe is more of a method and gives you substitutions in order to make it vegan, but you can make your own recipe and just sub mayonnaise with the veganaise. For instance, I wouldn't use green peppers, I would use celery. So, it's really up to you to put your signature spin on this dish. The main thing is knowing you can "veganize" your potato salad!

Enjoy and have a safe 4th!
