MOVE OVER MEAT MONDAYS- GRILLED AVOCADO AND TOMATO SANDWICH

Happy Monday folks!

Today's meatless recipe from vegweb.com is very simple and easy. This would be perfect for a lunch at home or an easy dinner after a long day!


Grilled Avocado and Tomato Sandwich

Ingredients (use vegan versions):

1/3 avocado
vegan butter (I use Earth Balance)
1 roma tomato
2 pieces of whole grain vegan bread
fresh basil leaves (optional)
sprinkle of red pepper (optional)

Directions:

1) Preheat pan on stove over medium heat while preparing the sandwich.

2) Slather each bread piece with vegan butter. In a small bowl, mash avocado until smooth. Spread on the inside of each bread piece. Slice Roma tomato into 1/4 inch slices and arrange to cover bread. Add optional ingredients if desired and put together.

3) Place in Frying pan and grill until desired brownness on each side.
