Happy Monday Everybody,

Today's meatless recipe comes from This looks like a scrumptious and quick meatless recipe to make. This recipe is a little on the indulgent side, so I would make it a once in a while go-to meal. This is also so hearty, you wouldn't really need a side dish.



1 tablespoon vegetable oil
1 onion, chopped
4 cloves garlic, minced
6 cups canned kidney beans, drained
2 cups water
3 tablespoons chili powder
2 teaspoons ground cumin
4 teaspoons prepared mustard
1 pinch cayenne pepper, or to taste
3 tablespoons soy sauce
4 cups cooked and mashed sweet potatoes
12 (10 inch) flour tortillas, warmed- I would do whole wheat tortillas.


Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a medium skillet, and saute onion and garlic until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce. Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Fold up tortillas burrito style, and place on a baking sheet.
Bake for 12 minutes in the preheated oven, and serve.

Sounds good right? I altered the recipe a bit because it did call for chedder cheese. You can go without the cheese or venture out and try the Daiya cheese that I raved about in a previous post. If you missed that, you can get it by clicking here.

If you live near Whole Foods or Trader Joe's, they both have great pre-made vegan burritos in their frozen section. Look for their store brand varieties and just be sure to read the label to make sure you're picking up the right one. This is an alternate route if you're craving a burrito but want it quicker than cooking from scratch!
