SAVORY SUNDAY- JJ'S FAMOUS OLD FASHIONED LENTIL SOUP

Welcome to this edition of Savory Sundays! I hope you all are having an enjoyable weekend! Today's savory bite is another JJ recipe. I know with temperatures soaring across most of the US, the last thing most want to think of is soup. However, I wanted to bring you something that I eat pretty regularly. A recipe close to the heart if you will..:-)

Lentil soup is yet another dish that I was never fond of until JJ came into my life. He is a big fan of it and I came across some in NYC with him that I really enjoyed, so from then on I was a believer! JJ's homemade version is the bomb, so I wanted to share his recipe with you. You may not use it now, but keep it on hand and try it some time. You will be glad you did! Here we go!

JJ'S FAMOUS OLD FASHIONED LENTIL SOUP

INGREDIENTS

1 16 oz bag of Lentils
1 large onion (diced)
5 medium sized carrots (diced)
1 extra large russet potato (peeled and diced)
Garlic Powder
Sea Salt
Pepper
Cumin

DIRECTIONS

Put lentils in a large pot to soak overnight. In the morning, drain lentils and rinse, place lentils in another pot and set aside. Using the same large pot the lentils were in, simmer the onion and carrots in olive oil for 20 minutes. Add 8 cups of water to the onion and carrots to make the broth. Add the lentils and diced potato, simmer at medium temperature for 45 minutes to an hour (all ingredients should be fork tender). Add garlic powder, sea salt, pepper and cumin to taste.

Let cool and serve and enjoy!

We have eaten this by itself, over brown rice and with toasted baguette- (read label to make sure baguette is non-dairy).
