Hey Folks,

Welcome to this edition of Sweet Tooth Saturdays! Today's recipe is Chocolate Pudding. I dug through my recipe folder that I have in the kitchen which contains different recipes I've gotten from the web. This one I believe came from vegweb.com. I'm going to have to start marking these up so I can give proper credit!

Anyway, just know this is not an original recipe but I have made this before with success! It's a quick and easy sweet treat!



2 tbsp cornstarch
1 1/2 tablespoon sugar
1 tb cocoa powder
1 cup soy or rice milk
1 of the following: vanilla or almond extract or peanut butter


Combine the first three ingredients in a sauce pan, add the milk and whisk well, heat over medium heat stirring often to prevent clumping. When the pudding has thickened (about four minutes), remove from heat and add the add in (extract, peanut butter or anything else you might want to try). The plain chocolate can be a bit dull, but the added flavor kicks it up a notch. You can serve this warm or cold.

Serves 2.

I had to play around a little with my add in to get my desired taste. Once, I did it was very enjoyable! I'm sure you will think so as well!
