SAVORY SUNDAYS- JJ's SPLIT PEA SOUP

Hey everyone,

Welcome to Savory Sunday.  Today's recipe is another one from JJ!  He happens to love split pea soup and recently started preparing his own version at home.  As we are moving into the cooler months, I thought this would be another hot and savory recipe you could add to your repetoire!  I must admit that I'm not a big fan of peas, but I'm sure some of you out there are and his recipe is simple and tasty! 

JJ'S SPLIT PEA SOUP

INGREDIENTS:

Dried split peas (no need to soak)
1 small yellow onion
3 medium carrots
3 tbsp of olive oil
Salt & Pepper (to taste)

DIRECTIONS:

In a large pot, sautee chopped onion and carrots in olive oil until tender.  Next, add 8 cups of water to the pot and bring to a boil.  Add 16 oz. dried split peas to boiling water and let simmer for 45 minutes.  Add salt and pepper as needed, let cool and serve!  Easy breezy!  Enjoy!
