Happy Monday!

As I was searching for another great recipe to post for Move Over Meat Monday, another idea came to mind- another meatless challenge!  If you've been following me for a while, then you know that I recently kicked off Veggin' Out's Seven Day Vegan Challenge.  If you are new to Veggin' and not aware, click here to check it out!  Anyway, I decided to launch another mini challenge along the same lines.  One that may not seem as daunting to my non-veg friends out there. :-)

Here is the challenge:

GO Vegan on Mondays- just ONE day a week over a period of a month.  That's it, plain and simple!  How much easier can it get..really?!  I have posted TONS of recipes since I started blogging in May and given a TON of other veg resources to find more, so this should be a piece of vegan cake!  The only other piece of the challenge would be to e-mail me a mini recap of how it went. I'm interested in hearing about the dishes you made or purchased to try and how you felt overall.  I will post the results here on the site for everyone to check out.

Now, for those of you out there that are already vegans, this does not apply directly to you, but I'm sure you MUST know some non-vegans you can bribe ask to step up to the challenge! :-)  I believe that making a change just one day a week can make a significant difference. 

Now, while you contemplate contacting me in order to sign up at, I will be busy thinking of some extra incentives for you non-vegans to do so.  I will also be doing the same for my vegan com padres who send me some challengers as well!  Now, let's go vegan one day at a time!

P.S.  As for Mike, my first seven day vegan challenge participant, he did indeed complete the seven days.  I will be posting more video from his journey and his wrap-up very soon.  He dedicated a lot of time to this challenge and it takes time for him to put episodes together.  Rest assured the conclusion will be posted here soon!  Thanks for your patience and keeping up!
