SAVORY SUNDAYS- SUSHI SALAD

Happy Sunday folks,

I hope everyone is having an enjoyable Sunday!  Today's recipe is an interesting twist on sushi.  JJ and I were looking at a youtube video of a gentleman who was making raw vegetable sushi, so that gave me the idea to look for a sushi recipe for today!

I found this one from my favorite recipe source vegweb.com.  It is not the traditional way to make sushi, but it sounds so good and different that I had to share it and will definitely try it! 

SUSHI SALAD

INGREDIENTS (use vegan versions):

2 1/2 cups rice (white or brown will work)

1/2 cup rice vinegar

2 tablespoon sugar

1 1/2 t.salt

2 avocado

1 medium cucumber (peeled and seeded)

1 medium carrot

12 lettuce leaves (Boston, butterleaf, or even napa are fine)

1 cup wasabi peas

1 sheet Nori (optional)

DIRECTIONS:

Cook rice with directions on package. Put it in a bowl and stir in vinegar, salt, and sugar and let it sit for about 10 minutes.

While it sits, cut avocado and cucumber into 1/2 inch or bite size chunks and shred carrot. Stir all of the vegetables into the rice gently so you don't squish the avocado.
Place a few lettuce leafs on each plate in a circular pattern . Spoon rice mixture on top of each plate. Top with crushed wasabi peas and crushed nori flakes!!!

I can't wait to try this one!  Also vegetable sushi is something you can easily find already prepared at the store.  I have purchased it numerous times from Whole Foods and other stores when I was in the mood for something quick and light.  You can also get vegetable sushi rolls at most restaurants that serve sushi as well.
