MOVE OVER MEAT MONDAY- JJ'S FAMOUS BLACK EYED PEAS

Hey folks,

Welcome to Move Over Meat Monday!  I want to share another wonderful recipe made vegan style that you can serve up over the holidays!  JJ's black eyed peas recipe!  Now, I must first preface by saying that this is yet another food item that I wasn't a fan of before having both JJ's and his mom's black eyed peas.  I am now a FIRM believer in them!  Test out JJ's version and you be the judge..!!

JJ'S FAMOUS BLACK EYED PEAS

INGREDIENTS

16 ounces dry black eyed peas
3 stalks celery (chopped)
1 extra large yellow onion (chopped)
Light and dark brown sugar (to taste)
Salt (to taste)
Pepper (to taste)
Season All (to taste)
Extra Virgin Olive Oil

DIRECTIONS:

Soak black eyed peas overnight in a large pot in room temperature water.  Saute chopped celery and onion in 3 tablespoons of olive oil, simmer for 10 minutes or until soft.  Add four cups of water to celery and onion and adjust temperature to medium heat, add black eyed peas.  Cook black eyed peas for about 45 minutes or until soft.  Once the black eyed peas are tender, add 1 tablespoon of light brown sugar, 3-4 tablespoons of dark brown sugar, salt, pepper and season all to taste.  Stir frequently.  Once the black eyed peas are tender and seasonings have melded to your taste, add one tablespoon of olive oil.  Allow peas to simmer for at least an additional hour for all the seasonings to come together.  Serve and enjoy!

Serves: 3-4

That's it! I know it sounds very simple and to the point, but I PROMISE you, you won't be disappointed with the taste.  These are SOOO good! He made these last year over Christmas and my family RAVED about them.  You just can't beat simple AND delicious!
