SAVORY SUNDAYS- VEGETABLE AND NOODLE SOUP

Hey folks,

Welcome to this edition of Savory Sundays!  I know many of us will be eating Christmas Day leftovers for a few days, but just in case you want to make a departure from that, I found the following soup recipe on Vegweb.  This soup is sure to warm you up on chilly winter days!  It sounds like an interesting twist on vegetable soup- check it out!

VEGETABLE AND NOODLE SOUP
INGREDIENTS (use vegan versions):
1/2 cup olive oil

2 cloves garlic

1 large onion/ 1 small purple onion

2 celery sticks

1 large potato

1 leek

3 large carrots

1 tomato

8.75 oz chickpeas

3 cups water / 2 cups vegetable stock

3 ounces linguine broken up


DIRECTIONS:

Finely chop the garlic, onions, leek, celery, carrots, potato, and tomato.

Heat the oil together in a large sauce pan add the garlic, onion, and leek fry for 5 minutes, then stir in the celery, and carrots, stir for 15 minutes longer, stirring the vegetables occasionally.

Add the stock/water, tomatoes, and potato. Bring to a boil lower the heat and let simmer for 40 mins.

Add the chickpeas and broken up linguine pieces to the pan and cook for 20 minutes.

Preparation time: 10 minutes, Cooking time: 1 hour 20 minutes
