MOVE OVER MEAT MONDAYS- SIMPLE SIDE

Happy Move Over Meat Monday folks!

The following recipe from vegweb sounds like a perfect simple side to compliment any dish.  If you've been following me for any amount of time, you are aware that asparagus is one of my LOVES!  I have also been trying to be mindful of finding recipes that use minimal oil as well and this one seems to qualify. I'm not a huge fan of nuts, but I would be willing to give this a try!

ASPARAGUS PECAN SAUTE 
 
INGREDIENTS (use vegan versions):

   1 teaspoon olive oil
   1 pound asparagus
   1/8 cup pecans, chopped
   balsamic vinegar, to taste 
   salt and pepper, to taste

DIRECTIONS:

Heat the oil in a skillet. Stir fry the asparagus in the oil for about 7 minutes.

Add the pecans.

Add balsamic vinegar, a little at a time to taste. Beware.. Dont add too much. Season with salt and pepper.

Serve with a couple of raw whole pecans on top as a side to your favorite dish.

Serves: 3-4, Preparation time: 10 mins
