Hey folks,

Welcome to Savory Sundays! I had Mediterranean for lunch today, so I was inclined to find a savory recipe to share that sounded good.  The following from Vegweb seems to fit the bill!  Check it out!


INGREDIENTS (use vegan versions):

4 medium bell peppers - Whichever Colour you Like

3 cups cooked mixed rice - I usually mix brown, white, and wild

1 6-ounce can tomato paste

1/2 cup garlic-stuffed green olives, sliced

1 1/2 cups cubed vegan feta cheese

1/2 cup sundried tomatoes, drained and chopped

1/2 lime, juiced

2 teaspoons oregano, fresh and chopped is best but dried will do

2 teaspoons basil, fresh and chopped is best but dried will do

salt and pepper to taste


1. Remove the top and insides of each pepper.

2. Mix the rice, tomato paste, vegan feta, olives, sundried tomatoes, herbs and lime juice in bowl and season to taste with salt and pepper.

3. Stuff each pepper with mixture and wrap in tin foil.

At this point you have an option to bake or BBQ the peppers

4. a. Heat oven to 450 degrees Fahrenheit and bake peppers for 15 - 20 minutes until peppers are slightly soft and heated through

4. b. Cook Peppers on BBQ 10 - 15 min until peppers are slightly soft and heated through. Keep a close eye to ensure the peppers don't burn.

Tip: Cook the rice while you are preparing the peppers and all other ingredients.
