Welcome to Talk To Me Tuesday!  Today's question comes from my cousin D- she says:

Hey Cuz -- could you please talk about olive oils? I have been using Extra Virgin for a good while, but recently read that it loses its potency faster and gets toxic when you cook with it. Supposedly better to use non-virgin olive oil and never cook with it - use it from the bottle over salads or whatever but don't cook with it. Maybe you could clear this up?

Well D, I have been doing more research on this topic as of late and have cut back considerably on my use of oil in cooking.  I have also been trying to be more mindful of the recipes I find and post here as well.  If the recipes do call for oil, I've been seeking out the ones that use them minimally.  Like you, I have been hearing that cooking oil is not good for you.  The one exception to this I've been hearing is coconut oil, but I'm still seeking out information on that front.  I have heard that the best way to use oil is to do so as you mention over salads, however I'm not even sure it's wise to do that often as well.  I highly suggest you read the article I posted from Mark Sutton about oil.  You can read it by clicking here.  The information he provides is by far some of the most valuable I've read yet.
