MOVE OVER MEAT MONDAYS- CHOCOLATE TREATS

Happy Monday to you!  I hope you all had a great weekend!  I'm sharing a sweet treat for today's move over meat selection so if you're looking for full meal ideas or sides, you'll have to go to the archives..:-)  VegNews sent a great recipe from Siue Moffat for making your own chocolates which would be great to stuff baskets for the holidays or a quick treat to satisfy your sweet tooth throughout the week!

CHOCOLATE TREATS

INGREDIENTS:


1 cup chocolate chips

1/4 cup peanut butter

1 tablespoon confectioners' sugar

1/8 teaspoon salt

1 tablespoon soymilk

2 tablespoons walnuts, finely chopped


DIRECTIONS:

In a small pot over low heat, melt all ingredients except soymilk and walnuts.

After ingredients are melted, pour in soymilk. Stir quickly to eliminate lumps. Chocolate will form into a ball.

In a bowl, pour melted ingredients and chill in the fridge for a few minutes until cool.

On a baking sheet, spread walnuts. Remove chocolate from fridge and roll chocolate into walnut-sized balls. Roll balls into walnuts.

In an airtight container, place all truffles. Truffles will stay fresh for a week.
