Hey folks,

WOW!! I can't believe it's been one year!  I have reached the goal I set out to accomplish one year ago today and it fills me with so much joy and satisfaction.  I think one of the most challenging things in life is to be consistent and disciplined with something, whether it be with your diet, exercise, journaling etc.  It's so easy to find an excuse not to do something on a daily basis.  You can have the best intentions, but it's very easy for life to get in the way of keeping a promise of dedication to yourself.  I know first hand, because I'm sure like many of you reading, I had struggled with it myself.  However, through this blog, I overcame that and proved to myself further what I already knew in my heart, that I can do anything I put my heart, mind and spirit to.  I did not miss a single day, throughout 4 moves (one across country), working 12 hour days, new job searching, heartache, and so many other daily changes.  I hope this serves as an inspiration to you as well that you can push through anything that comes your way and achieve your goals and dreams.  I had set out to start blogging as a means to lock into something that I could be consistent and disciplined with, and to blog about something close to my heart made the most sense.  I have a true and sincere passion about what I do.  I truly in my heart want people to live and thrive at their absolute best and I believe the key to doing it starts with a healthy body and mind. 

I know everyone will not choose a vegan or even vegetarian lifestyle, but I wanted people to know they can if they so desire and wanted to bring the tools and inspiration to do so.  I sincerely hope I have done this for you over this past year.  I hope I have made you think and prompted you to try new things, not just in your diet, but in your life in general.  I am really filled with emotion as I write this because I am so grateful for what doing this blog has brought to my life, tangibly and spiritually.  I have met so many great people along the way and it is continuing each day.  I know the tone of this may sound as if this is it for the blog, but it's just the beginning!   I have so many more plans and ideas on the horizon and I hope you will stay the course with me and be a part of it all.  I hope I have enriched your lives in some small way because you have enriched mine with your love, interest and support throughout this year.  I do this because I believe in it and I believe in you and want you to live the healthiest lives. 

I am also thrilled to report that I am now also a writer for www.thriftyandgreen.com!  I will be delving into some new territory learning and teaching about being more environmentally conscious.
