MOVE OVER MEAT MONDAYS- ARTICHOKE OLIVE SALSA

Hey folks,

Welcome to this edition of Move Over Meat Mondays!  I indulged in some chips and salsa this weekend, so the following recipe stood out to me, it sounds like such a delicious twist on salsa.  I LOVE olives and artichokes, so this is right up my alley!  This recipe called for an optional sprinkling of cheese, so I altered the ingredients by removing it altogether..as no surprise to any of you I'm sure..:-)  I snagged this from meatlessmonday.com again and the following recipe is courtesy of Patrice of Circle B Kitchen.  Again, if you haven't yet visited the meatlessmonday site, I strongly encourage you to do so, they have great tips, ideas and recipes to check out to get you motivated to do a meatless Monday!
