SOME GREAT NEWS AND A QUICK BREAKFAST RECIPE!

Hey folks,

Before getting into today's post, I want to first report some great news!  I am very pleased to report that my friend and first vegan challenge participant, Mike has officially decided to become vegan!  If you missed his journey, please click here to read his background and the reasons he agreed to do the challenge in the first place and click here to watch his first episode from the challenge!  This is very exciting news and I of course offer him all my support as he embarks on this new dietary journey! Who's next?! :-)  Let me give you some incentive by posting a yummy recipe to try! 

It's morning as I write this so I'm going to go with a breakfast recipe that features the protein packed quinoa as the star!  To get a refresher on quinoa, click here.  The following comes from chooseveg.com  by way of "Foods That Fight Pain" by Neal Barnard M.D.

FRUITED BREAKFAST QUINOA

INGREDIENTS

1-1/2 cups vanilla rice milk

2 tablespoons raisins

1 cup chopped fresh or canned apricots

1/4 teaspoon vanilla extract


DIRECTIONS

To thoroughly rinse quinoa, cover it with water in a mixing bowl, then rub it between the palms of your hands. Pour off the cloudy liquid through a strainer and then repeat the process two or three more times, until the rinse liquid remains clear.

In a medium-sized saucepan, combine the rinsed and drained quinoa with rice milk. Bring to a slow simmer, then cover and cook for about 15 minutes until the quinoa is tender.

Stir in the remaining ingredients, then transfer about 1-1/2 cups to a blender; puree.

Return pureed mixture to the pan and stir to mix. Serve warm or chilled.

    To All:

    Christa gave me Homework...and I WILL do it...even if it takes me a few days...because I'm very serious about making this my lifestyle. My sister (School Teacher) got very sick yesterday because she consumed crab and shrimp. It went from an itch to having multiple hives to the EMERGENCY ROOM. Her throat started closing and the Doctor said that she arrived JUST in time! She had every intention to go to sleep after she ate because she said, "I feel weird." Please understand that she eats seafood probably once or twice a week and never had an outbreak. The doctor told her to never eat seafood again...because she probably wont make it to the hospital. CRAZY RIGHT? To ME the craziest thing is...the DOCTOR didn't educate her about WHY crab or seafood isn't good FOR YOU. (But that's another topic)
