A YUMMY RECIPE FOR YOUR FRIDAY NIGHT!

Happy Friday folks,

The following recipe I found on vegweb tonight sounds soooooo good!  It was actually posted today by StevenPerDiem.  I looked at his profile to see if he had a blog or site to link back to, but there isn't one listed.  So, Steven, if you're out there and have more of this deliciousness to share, please let us know!! I want to give you your props! :-)

QUINOA WITH TERIYAKI POTATOES AND KALE

Ingredients (use vegan versions):

3/4 cup quinoa

2 red potatoes (diced)

2 big handfuls of kale (chopped)

olive oil

pepper

Teriyaki Sauce:

1/4 cup soy sauce

1/2 cup water

2 cloves chopped garlic

2 tbsp brown sugar

sriacha or red pepper flakes to taste

1 tbsp cornstarch


DIRECTIONS:


1. Cook quinoa.

2. Teriyaki sauce: Mix all ingredients except cornstarch in a saucepan and heat over medium high heat. Mix cornstarch with some 2 tablespoon water, add to other ingredients and heat until boiling, stirring occasionally, until thick. Remove from heat.

3. Heat up enough olive oil to cover bottom of large pan over med-high heat and throw in the diced potatoes. Sautee until tender and browned. Throw in kale and stir it around until wilted, add pepper.

4. Turn off the heat and mix in the teriyaki sauce.




Makes: 2 servings, Preparation time: 5 minutes, Cooking time: 30 minutes
