My Sunday has definitely been nice!  It began with great food and conversation with my dear friend HH.  We headed over to M Cafe to grab some breakfast this morning and it was delicious and light, yet also filling.  We were each torn over whether to get the tofu scramble or the blueberry pancakes, so we got both and split it up!  This is the second time I've been to M Cafe and they made sure to keep up the great reputation they built with me from the first time I went there.  They're menu is not entirely vegan, but the selections they offer are really great!  So, M Cafe definitely goes on my recommended list if you're in or visit L.A.!  Click on the link to check 'em out! http://www.mcafedechaya.com/index.html

So, in honor of the pancakes portion of the breakfast, I thought I would seek out a blueberry pancake recipe to try at home when you're in the mood for some cakes! This recipe posted by Mugzy Nator on vegweb got rave reviews!

INGREDIENTS (use vegan versions):
2 cups flour

4 teaspoons baking powder

1 teaspoon salt

1/4 cup + 2 tablespoons sugar

2 teaspoons vanilla

2 egg replacers (http://vegweb.com/index.php?topic=7678.0)

1 2/3 cups nondairy milk (I use soy)

2 tablespoons vegetable oil, if desired

1 cup blueberries (frozen or fresh)


Combine ingredients except blueberries, and stir until blended. Stir in blueberries.

Preheat and oil a pan or griddle. Pour 1/4 cup batter into pan and cook until the edges are dry.

Carefully flip the pancake over and cook until golden.
