GIVE CUPCAKES A SPOOKY TWIST!

Hey folks!

Looking for sweet vegan treats to serve at your holiday shindig?  What about some zombie cupcakes? This is a fun twist on your regular cupcake from VeronicaP over at ehow.com. Satisfy and spook your guests with these!

ZOMBIE CUPCAKES

INGREDIENTS

1 1/2 cup flour

1 cup sugar

1/4 tsp salt

1 tsp baking soda

1 Tbsp vanilla

1/4 cup shredded coconut

1/3 cup vegetable oil

1 Tbsp white vinegar

1 cup water

1/2 cup cherry pie filling

DIRECTIONS

Mix flour, sugar, salt and baking soda in a bowl. In a separate bowl, mix oil, vanilla, water and vinegar. Combine them.

Line a cupcake pan with paper liners. Pour batter into the liners until they are just under half full, then spoon 2 teaspoons of pie filling into each liner. Cover the filling with more batter, leaving about a 1/2 inch at the top.

Bake for about 25 minutes at 350 degrees. Allow to cool for 30 minutes, then decorate with shredded coconut. When you bite into these zombies, their fruity "brains" spill out.
