Hey folks!

I hope everyone had a fabulous Thanksgiving holiday and I can't believe it's over already!!  Now that the holiday season is officially in full swing, I'm in the mood for baking!  I have found so many recipes as of late that I look forward to trying over the next several weeks including the following from VegWeb! This pumpkin chocolate chip bread submitted by Charlotte is sure to make the house smell divine and your taste buds smile.  Let's check it out shall we?


INGREDIENTS (use vegan versions):
1 3/4 cups flour

1-1 1/2 cups sugar

1 teaspoon baking soda

1 teaspoon cinnamon

3/4 teaspoon nutmeg

1/4 teaspoon allspice

1/4 teaspoon cloves

1/4 teaspoon ginger

1/8 teaspoon salt

1 cup pumpkin puree

1/2 cup margarine, melted

2 egg replacers (Ener-G)

1/3 cup water, orange juice, or nondairy milk
1 cup vegan chocolate chips, nuts, dried cranberries, or raisins


Preheat oven to 350 degrees F. Grease 2 medium loaf pans. Combine dry ingredients.

Mix wet ingredients and then stir in dry ingredients. Stir in chocolate chips.

Pour into pans. Bake 45-50 minutes.

Also, it can be used for muffins or to make just one big loaf (9X5" loaf pan).
