THE QUINTESSENTIAL HOLIDAY COOKIE!

I hope your weekend is going splendidly! 



I think one type of cookie really screams the holidays and that is the sugar cookie!  I have so many memories of making sugar cookies growing up around this time of the year. I think what makes these cookies work so well is the ability to decorate them in so many festive ways, such as the one pictured from vegetariantimes.com.  Today's vegan sugar cookie recipe comes from VegWeb.  This simple sugar cookie recipe sounds like it will have you singing holiday songs in no time!  Check it out!

SUGAR COOKIES

INGREDIENTS (use vegan versions):

1/2 cup vegan butter

3/4 cup sugar

1 egg replacer (http://vegweb.com/index.php?topic=7678.0)

1/2 teaspoon vanilla

1 1/4 cups all purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

1 tablespoon nondairy milk

DIRECTIONS:

Preheat oven to 375 degrees F. Beat thoroughly butter, vegan sugar, egg replacer, and vanilla.

In separate mixing bowl, sift together flour, salt, baking powder. Add flour mixture to butter mixture, and add milk and mix.

Form dough into balls and flatten to 1/2" thick, or you can roll dough and use cookie cutters (I find that the dough balls work best). If using cookie cutters, be sure to flour surface and rolling pin.

 Bake for 8-10 minutes (the thicker the cookie, the more time).
