Some New Stuff Cookin'!

Hey folks!

I hope you're week is moving along nicely!  I cooked up some new dishes over the weekend that I wanted to share with you!

Sweet Potato Hash
I woke up Saturday morning with the idea to throw some hash together.  I had some kale I needed to finish off as well as some sweet potatoes and tofu.  So, I threw all those things in a pan along with a yellow onion and sauteed it all up.  After everything was done, I topped it off with some sea salt, Trader Joe's All Seasoning Salute and some nutritional yeast.  It was quick, easy and best of all very tasty!  This will definitely be one of my go-to meals from here on out! 

Sauteed Apples
Then on Sunday, I decided to have an "indulgent" breakfast and made some apples.  By making apples, I mean I sauteed them on the stove with a pat of some non-dairy spread and a squeeze of lemon.  After they were nice and soft and ready to eat, I topped them off with a dollop of Trader Joes' all natural peanut butter.  Another quick, easy and delicious dish!
