Playing With Zucchini!

Happy Memorial Day!  I hope you all had a great weekend!  Things have been so hectic for me as of late so I was BEYOND thankful for the holiday, but truth be told I could use at least one more day!  Anyway, I just wanted to let you in on some new stuff I've been making in the kitchen!

Since I've decided to stay away from processed foods as much as possible, it has forced me to be a little more creative in the kitchen and seek out recipes that utilize whole food ingredients.  I was craving some pasta the other day and have seen countless recipes using zucchini as the "noodles", so I decided to give it a try!  All I did was wash the zucchini and with a peeler, I made strips to resemble the noodles.  I sauteed up some onion in the pan until soft and then added in the zucchini and sauteed them both together for a bit until the zucchini was also soft and added in some nutritional yeast, pink Himalayan sea salt, pepper, Trader Joe's all seasoning salute and a little garlic powder.  I also have some marinara sauce that I'm trying to use up, so I just put about a tablespoon of that over the zucchini noodles as well.  I roasted a portobello mushroom and put that on top (not pictured) and the end result was nothing short of fabulous and satisfying.
As I was preparing my meals for the week, I made some more zucchini noodles so I could have some later in the week but I didn't want to let the core of the zucchini go to waste.  So, I took to the internet to see if I could find some recipes that use zucchini in smoothies and I found and tried one that is great!  Click here for that recipe.  I used coconut water instead of regular water for mine and it was delicious!
