What's Been Cookin'!

Hey folks!

Happy first of May to ya!  I can't believe how fast time is flying by!  Things have been very busy on this end between my day job work schedule, my fitness training and trying to keep up here, it's been hectic!  However, I am grateful and continue to press on!  Lately, I've been trying new food combinations and gluten-free snacks as I move forward in transforming my body for my upcoming competition. 

I also have been really relying on meals that are easy to make and of course nutritious. :-) So, here's what's been cooking lately.  I got the idea from my boss about baking tofu in the oven.  All this time I've always sauteed it in the pan, but now I just drizzle some extra virgin olive oil at the bottom of my tray and layer the tofu on top and sprinkle with some seasoning and bake at 350 for about 20 minutes or so and will have with some vegetables, lately it's been broccoli which I just slightly warm in the oven as well.  You just can't get any easier than that right?! 

Yesterday while I was out, I picked up these gluten-free crackers from the store and haven't quite made up my mind about them yet.  I would say they are just average right now.  Will I eat them yes, will I buy them again, the verdict is still out.  I think it's a case of the more you eat them the better they taste, so we'll see.  However, I know I've probably just you all the way off with that last statement! LOL! 

Lastly, my go-to salad for the week (pictured above) has been a combination of arugula, spinach, diced apple, lentils and avocado with a little Goddess dressing.  I really like the combination of the peppery taste of the arugula and the sweetness from the apple balancing it out.  As for the dressing, I'm really just trying to use it up because I bought it a little while ago.  The best dressing for me is a squeeze of lemon juice, and a few spritz's of Bragg's Liquid Aminos and then adding some seasoning.  So, there you have it!  That's what's been cookin' on this end.  What are some of your easy go-to meals?  Let us know in the comments.
