Meet My Meals- Fire Roasted Tomato Soup
Happy Monday to you! I have been wanting to make tomato soup for a couple of weeks now, so I decided I would finally turn my desire into reality! I consulted a few recipes online and in a cookbook of mine (one that I'll be reviewing soon) to get some ideas. I really didn't want to do anything elaborate with a ton of ingredients, so I decided to simplify some of the recipes I came across.
The result was perfection! Tomato soup was one of my favorites growing up, so I'm excited to have an easy vegan version I can whip up at home whenever I want. Check the method:
2 cans of organic fire roasted tomatoes
1 can of tomato paste
2 cups of low sodium vegetable broth
1 yellow onion
2 cloves of garlic (minced)
3 carrots (diced)
1/2 can of coconut milk
1 teaspoon oregano
I have been trying to cut back on cooking with oil, so I drizzled some Bragg's Liquid Aminos in the bottom of my soup pan and added in the chopped onion and once the onion began to soften, I added in the garlic, carrots and a little of the vegetable broth and let that simmer for three to five minutes. I added in the rest of the vegetable broth and the fire roasted tomatoes and let simmer for about 10-12 minutes. I then took the pot off the burner and let it sit for a few minutes and then carefully transferred to the Vitamix. I then added the tomato paste and oregano and started the Vitamix on low (1) and then gradually increased the speed and blended on high for about 45 seconds. I then transferred the soup back to the pot and turned the burner back on and then stirred in the coconut milk and let it simmer for about 5 more minutes and voila, creamy tomato soup! The only thing missing was a vegan grilled "cheese" sandwich to go with it! I will surely whip this up again and next time, I think I'll take it a step further and ditch the cans and roast up the tomatoes myself! Sounds good right?
