Meet My Meals- Avocado In My Mousse and Overnight Oats!

Vegan Chocolate Mousse
Hey folks!

I haven't let you meet my meals in a while and I just tried out two recipes that warrant an introduction, so here goes!  I have seen many recipes for chocolate mousse using avocado and overnight oats.  I finally stopped thinking about trying these out and decided to finally make it happen and BEYOND glad that I did!

I eat oats just about every day as my first meal.  However, I use the rolled oats that require stove top cooking, so depending on where my work day takes me, this proves to be a challenge at times.  So, I decided to give the overnight oats method a try.  Talk about a time saver and not to mention delicious!  I did a variation of this recipe here and they came out so fantastic.  My variation was that I used Hazelnut Almond Butter instead of peanut butter.  I mean, why did I wait so long to do this?!  The batch I made was enough for two days and this method is a definite keeper and I highly recommend it!

Now, on to the mousse!  I had some very ripe avocados that needed to be put to use and I had all the other required ingredients on hand, so there was no excuse to give this a whirl.  Even though I love both chocolate and avocado, I was still a tad skeptical of how this would taste.  Let me just say that was wasted skepticism for sure.  This mousse is THE BOMB!  It's so quick and easy and a great way to use up ripe avocados!  Seriously, who doesn't like decadence that comes with a dose of good for you?  The recipe I used is here!
