Meat My Meals: Discovering A New Twist for Tofu!

Hey folks!

Happy Wednesday to you!  With my time being spread so thin these days, it's vitally important for me to have quick and easy dishes I can put together when I do my weekly meal prep.  A lot of the time I find myself eating the same dishes, just to make it easier on myself.  However, it's important to keep what I'm eating exciting and I knew just my regular baked tofu wasn't going to cut it this week.

So, I decided to kick it up a notch and coat my tofu in cornmeal and spices to see if that would do the trick and it certainly did!! I just simply poured some cornmeal in a bowl and added some of my favorite spices including, Himalayan Pink Sea Salt, Cayenne Pepper, Garlic Powder and Everyday Seasoning (from Trader Joe's) and whisked it all together.

Then, I took the tofu cubes (you must make sure to press the excess water out of the tofu, some people use a tofu press, but if you don't have one like me, I just placed the tofu on a plate and then put another plate on top and then put a cast iron skillet on top of that to press the water out and let that sit for about 15 minutes, you can leave it longer if you have the time. I additionally wrap the tofu in paper towels and pat dry prior to this process to help things along).

Then I put the tofu in the oven at 400 degrees for about 25 minutes and flipped once half way through and voila, cornmeal tofu!  The cornmeal with the combination of spice was perfection to me.  As you see pictured, I paired it with brown rice and roasted broccoli and I also added a bit of Soyaki (again form Trader Joe's) for an added bonus.  This method is one I highly recommend and will definitely continue to use!
